When the Kampot pepper berry is fully mature and turns to a beautiful bright red color on the vine, it is harvested to produce red pepper. The red pepper then becomes white pepper when the farmer extracts the white core (think coffee bean from a coffee cherry), and then sun-dries the remnants. This particular white pepper is produced in the pepper-famous Kampot province of Cambodia.

Kampot White Pepper develops an intense bouquet and delicate aroma. Light on heat and acidity, the clementine and rosemary notes really shine through.
